We believe a cocktail should be a transformation, not just a drink. Ember was born in the rich cornfields and historic rickhouses of Owensboro, Kentucky, home of Green River Distilling (DSP-KY-10), a legacy that dates back to 1885.
Perfected in the coastal fog of the North Bay, Ember is the union of time-honored Kentucky Bourbon and artisanal cocktail craft. We start with Green River's 5-year-old Bourbon, a high-corn mash bill (78% corn) aged in deeply charred oak barrels. Finished with rich dark maple syrup and warm cinnamon, it is our refined tribute to the classic Old Fashioned, a smooth, fireside ritual of smoke, caramel, and wood.

Our process begins in the ground of Oaxaca. We hand-harvest 100% Espadín agave, roasting the hearts in traditional stone pits. This is "The Ash" — the deep, smokey soul of our Mezcal. It is a slow, ancient method that preserves the history of the land in every drop. The heat of the pit imparts a complexity that cannot be manufactured or rushed — only earned through time and fire. Each roast is a decision made by hand, guided by generations of knowledge passed down through the families of Miahuatlán.
Our process begins at Independent Stave Co., where new American white oak barrels are deeply charred over open fire. This is "The Ash," the deep, smoky soul of our whiskey. These barrels are then filled with Green River's high-corn mash bill (78% corn) and aged five years in the historic rickhouses of Owensboro, Kentucky. The intense char transforms the wood, imparting rich notes of caramel, vanilla, toasted oak, and smoke that cannot be manufactured or rushed, only earned through fire and time. Each barrel is a decision guided by generations of Kentucky craftsmanship, turning simple grain into something profound.
Our spirit is double-distilled in small copper pot stills. This "Copper" brings out the bright, electric notes of the agave, creating a liquid that is as clean as it is complex. We don't rush. We bottle only when the balance is perfect.
Our process continues in the iconic copper stills at Green River Distilling. Here, the high-corn mash is distilled not once, but twice in traditional copper pot stills, a time-honored method that captures and purifies the essence of the grain. This is "The Copper," the beating heart of our whiskey. The copper interacts with the vapors, removing harsh impurities while preserving the rich, sweet character of the bourbon. It is a slow, deliberate craft that cannot be rushed or replicated by modern shortcuts, only earned through fire, copper, and patience.
The Sunburn is our tribute to the Oaxacan heat. We blend our artisanal Mezcal with fresh-pressed lime juice, a touch of raw agave nectar, and the slow-burn of jalapeño. It is vibrant, sophisticated, and ready to pour.
Ember is our tribute to the classic Old Fashioned. We blend Green River's 5-year Kentucky Bourbon with Crown Maple's organic dark maple syrup, infused with warm cinnamon sticks. It is rich, sophisticated, and ready to pour over a large ice cube.
